Ground Turkey, Kale & Pepper Soup with Cauliflower Gnocchi



I have good news and bad news. This is an instant pot recipe. I have not made it on the stovetop or in a crockpot yet. I understand if you want to leave, but I bet it would be easy to figure out how to do it! In the meantime, below is a recipe I've tweaked and twisted and turned into what I believe to be one of the best things I've ever made.


INGREDIENTS


  • 1 lb ground turkey

  • 32 oz chicken broth

  • 2 cups cauliflower florets or 1 bag frozen cauliflower

  • 1 14 oz can of diced tomatoes

  • 2 garlic cloves, diced

  • 1 bundle kale, chopped

  • I bell pepper, your choice of color, diced

  • salt & pepper

  • 3 TBSP plant butter

  • 1 package frozen cauliflower gnocchi


INSTRUCTIONS


  1. Press the sauté button on the Instant Pot. Add ground turkey and break into pieces until cooked through. Use a slotted spoon to remove and set aside.

  2. Add broth, frozen cauliflower, diced tomatoes, garlic, and salt. Secure lid on Instant Pot and close off pressure valve. Press soup/broth for 10 minutes.

  3. Once the timer goes off, release the pressure carefully. Then you can use your immersion blender if you're fancy and have one. I don't, so I have to take a few extra steps and blend mine in a blender a little bit at a time. I repeat, a little bit at a time. The trick here is being careful not to fill the blender more than a 1/3 of the way up and instead of using the typical piece that goes in the center of the top, use a towel to keep the liquid from exploding and burning you and everything you love nearby. Anywho this makes the soup creamy without adding dairy to it.

  4. Once you've blended the soup, however you've blended the soup, add the diced bell pepper and chopped kale, and salt and pepper to taste. Once again, seal the lid and close off the pressure valve. Press soup/broth for 10 more minutes.

  5. While the soup finishes cooking, you can cook the the gnocchi, but not like the instructions on the package say. Unless you like your gnocchi soggy. If you do not like your gnocchi soggy, do it like this: cook frozen cauliflower gnocchi on a plate for 3 minutes in a microwave, depending on your microwave.9 You want it to be soft. Pat it dry with paper towel, and then heat the butter in a pan on the stovetop. Once hot, add gnocchi to pan and cook for 15 minutes, flipping occasionally.

  6. Once the timer has gone off again, you can carefully release the pressure. Once it's safe, remove the lid and add your cooked ground turkey and stir. Top each bowl with some of that crispy cauliflower gnocchi and enjoy the s*%t out of it.
